African meal for 4 people

 

PILAU

-          4 cups  Cooked Rice

-          2 large potatoes

-          1 med. Onion

-          2 large cloves of Garlic

-          1 or 2 tomatoes

-          200 grams cubed beef (eye of round/sirloin)

-          Oil

-          Salt

-          1 tbs. soy sauce

-          Spices. A Masala mix with: Cumin/Coriander/nutmeg/cinnamon/cardamom/cloves.

The mix is sold in packages in Indian stores. Check to make sure that the one you choose has no chilly peppers. African Pilau is not hot.

 

Mix cubed beef with 1 tbs Masala mix and salt, chopped garlic and 1 tbs. soy sauce. Let stand for 1 hour (Or overnight in fridge)

 

Clean potatoes and cut in 1 inch pieces

 

In a large frying pan poor a liberal amount of oil (8 tbs.) fry onions and tomatoes.

Fry till the liquid of the tomatoes has disappeared

Add beef and fry till brown on all sides.

Add Potatoes and fry with the beef till the potatoes are golden brown. (You may need to turn down the heat a bit and add some oil.)

Once the potatoes are cooked add the cooked rice and mix it all in the frying pan. Add more salt/ Masala mix to taste.

SPINACH WITH PEANUT BUTTER

 

1 bag of spinach

1 small onion

1 small tomato

2 heaping table spoons of Peanut butter (Crunchy or smooth)

1 dl. Broth. (Use beef or chicken cube)

Salt

Oil

 

Cook spinach/ drain and set aside

In a large frying pan poor 2 tbs. of oil and fry onions and tomatoes and fry till the liquid of the tomatoes has disappeared. Add 2 heaping spoons of peanut butter.

Add broth and stir well. The peanut sauce gets thick and may need some extra liquid.

Add cooked spinach and some salt to taste

CHICKEN IN COCONUT SAUCE

 

4 Chicken pieces

3 to 4 tbs. of oil

1 large onion (Finely chopped)

2 tomatoes (Cut into small pieces)

2 cloves of garlic (minced)

2 tbs. Soy sauce

2 Peppers (RED AND/OR GREEN)

Salt

1 can of coconut milk

  

Clean and marinate chicken pieces in soy sauce, garlic (and some salt)

Cut peppers into strips

In a large frying pan poor 3 to 4 tbs. of oil and fry onions and tomatoes and fry till the liquid of the tomatoes has disappeared.

Add chicken and brown the pieces.

Add peppers.

Fry till chicken is done. About 25 minutes. (You may have to lower the heat)

Before serving:

Add a little water and heat till the broth starts boiling.

Add the can of coconut sauce. DONOT BRING THIS TO A BOIL OR THE SAUCE WILL SEPARATE!

Serve the sauce over the chicken and/or over plain cooked rice.

KACHUMBALI – CABBAGE SALAD

¼ piece of a small cabbage shredded

1 to 2 onions, finely chopped

2 to 3 tomatoes cut into small pieces

½ cucumbers cut into small pieces

Lemon juice of 1 big lemon

1 tsp salt.

 

Mix this in one bowl at least 2 hours before dinner.

The vegetables are marinated and ready to serve
