Chunky Cheesecake Brownies (Vegan alternate)

Very rich, very decadent. These work quite nicely with non-wheat flours; the chocolate flavour is strong enough to cover even things like buckwheat, let alone rye or tapioca flours.

11/2 c semi-sweet chocolate chips or chunks (1 280 g package)
3 eggs (or 3 tbsp flax seeds and 3/4 c water)
1 250 g package cream cheese (or 11/2 c ground almonds and 1/2 c water)
1/4 c butter or margarine
3/4 c sugar
2/3 c flour
1/2 tsp baking powder
1/4 tsp salt

Regular version: Cream together cream cheese and 1/4 c sugar, and 1 egg. Stir in 1/2 c chocolate chips.

Vegan version: Grind flax seeds and 3/4 c water in blender about 3 minutes. Pour out 1/2 cup of mixture for later. Add ground almonds, 1/4 c sugar, and 1/2 c water to blender container and blend several minutes. Stir in 1/2 c chocolate chips.

Melt remaining 1 c chocolate chips and butter or margarine in double boiler or microwave; blend and let cool slightly. Add remaining 1/2 c sugar, and 2 eggs or reserved flax/water mixture, then flour, baking powder and salt.

Grease 9" pan. Pour in half of chocolate mixture; top with cream cheese or almond mixture, then remaining chocolate mixture. Swirl with knife to marble slightly.

Bake at 350°F 25-30 min. for regular version, 325°F 40-45 min. for vegan version. Brownies should be evenly risen in pan and slightly browned on top. Store in refrigerator.

Individual Serving Version: The brownies can also be baked as 12 individual servings in a greased medium muffin pan. Distribute half of the chocolate mixture among the cups (roughly 11/2 tbsp per cup), then the cream cheese/almond mixture (about 22/3 tbsp per cup), then the remaining chocolate mixture (again about 11/2 tbsp per cup). Swirl with knife to marble slightly. Bake at about 375°F 15-20 min. for regular version, 350°F 20-25 min. for the vegan version. Care is needed to avoid burning because of the higher temperature and smaller containers.
