This is a really easy one. Just take a dried apricot (slightly squishy, not too dry), and use a small sharp knife to cut a slit in its side and open a "pouch" as though it were a pita bread. Stuff it with a few semi-sweet chocolate chips. Squeeze the slit shut again, with the sticky apricot insides holding it closed.
Repeat this for a number of apricots. Just before serving time, spread them out on a microwaveable dish, and microwave them gently for a few seconds — just long enough for the chocolate to melt. Your goal is to have the apricots filled with warm gooey chocolate, not to cook the things. Depending on how evenly your microwave oven works, you may want to heat only a few at once.
