Cherry Chocolate Chip Squares
Shortbread, chocolate and cherries. To make a vegan version, use dairy-free margarine or vegetable shortening instead of the butter, and omit the egg yolk. (And check the ingredients listed for chocolate chips etc.)
3 c + 3 tbsp flour
1 c sugar
1 c butter, softened
3 c pitted sour cherries
1 egg yolk (optional)
11/2 c chocolate chips
Combine 3 c flour, 1/2 c sugar, butter, and (optional) egg yolk; mixture will be crumbly. Reserve about a quarter of this mixture for later use, and firmly press the rest into an 8"x13" pan.
Combine the sour cherries, chocolate chips, and remaining 3 tbsp flour and 1/2 c sugar. Spread this mixture over the mixture already in the pan. Sprinkle remaining crust mixture over the top and press it down gently so it's not completely loose.
Bake in preheated 325°F oven for about 40 minutes, or until crumb topping is lightly browned.
