Banana Nut Tea Bread

Makes 1 loaf

  • 1 lb ripe bananas (3-4)
  • 1/3 cup butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup sour cream (fat free works fine)
  • 3/4 cup white flour
  • 3/4 cup whole wheat flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 cup chopped nuts

Mash the bananas and set aside.

Cream the butter and sugar till light, and then add the bananas, along with the eggs and vanilla, beating until well blended. Stir in the sour cream.

Sift together the dry ingredients and add to the banana mixture, stirring until well blended. Fold in the nuts.

Bake in a buttered loaf pan at 350F for 50-60 minutes (I often have to go over this time for a knife to come out clean)

Variation: After buttering the pan, sprinkle it liberally with sesame seeds. They bake and stick to the outside of the loaf. YUM!
