Broccoli Salad
Serves 4 to 6

  • 2 heads of broccoli, in florettes
  • 1/2 red onion, finely chopped
  • 1 zucchini, in julienne slices (i.e. matchsticks)
  • 1 tomato, diced
  • 1/4 cup toasted almonds (optional but yummy)
  • 6 TBSP yogurt (low fat is great)
  • 2 TBSP balsamic vinegar
  • 1/4 tsp each: onion salt, black pepper, granulated sugar

Mix everything together in a big bowl and enjoy! It's already cool because nothing is cooked, and the yogurt and most of the veggies are right from the fridge!
