Broccoli Soup with Toasted Almonds

Serves 6

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cups vegetable stock or water
  • 1 large bunch broccoli, trimmed and cut into chunks
  • salt and pepper to taste
  • 2 tbsp toasted sliced almonds

1. Heat oil in a large saucepan. Add onions and cook until tender, about 5 minutes. Add stock, bring to a boil anc cook 5 minutes.

2. Add broccoli. Cook until broccoli is tender, but still bright green. Purée in a blender and season with salt and pepper to taste. If soup is too thick, add additional stock or water and re-season.

3. Serve hot, sprinkling each dish with the toasted almonds.
