Creamy Lentil Soup

Serves 4 to 6

  • 1 cup lentils (red are good), rinced and set aside
  • 1 Tbsp butter or veggie oil
  • 1 med white onion, diced

Saute the onions in the oil until they are translucent

  • tsp dried tarragon
  • 1 tsp sweet paprika
  • 1 bay leaf

Add these to the onions, stir; add the lentils, stir to coat

  • 3 - 4 cups veggie broth

Add three cups of the broth, bring to a boil, simmer 20-0 minutes until the lentils are tender, adding more broth if necessary.

When the lentils are done, remove the bay leaf and puree the soup in a blender. Return to saucepan and heat gently 5 minutes, adding more broth if needed, and seasoning with salt and pepper, to taste.
