This traditional Middle Eastern spread is terrific as a dip for veggies as well as just spread on pita bread.  It is a super dish to take to a picnic or pot-luck, as it is quite filling, and it's really easy to make.

Makes about 2 cups

  • 1 can chickpeas
  • 3 cloves garlic
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • about 1/2 cup water
  • 1/2 tsp cumin

Blend everything in a blender or food processor until perfectly smooth and creamy, adding just enough water to make a mayonnaise-like consistency.  Chill until ready to serve.  An optional, but delicious, garnish is a sprinkling of paprika and/or allspice.
