Chocolate Tofu Pie

Serves 8

  • 1 graham cracker crust
  • 1 cup chocolate chips
  • 2 Tbsp water
  • 1 lb soft or silken tofu
  • 1/4 cup soy milk
  • 1/3 cup honey
  • 1 tsp vanilla

Melt the chocolate and water together slowly over low heat.  In a blender, blend with the tofu until very smooth.  Add the soy milk, honey and vanilla and mix well.

Pour into the prepared pie crust and bake at 350F for 30-35 minutes.  Let set in the refrigerator overnight.

This pie is best made a day ahead.
