Plain Basmati Rice

This is a how-to guide, rather than a recipe.  You can adjust the quanities for the amount of rice used.  In general, 1 cup of dry white rice will yield 2 cups cooked rice.

Be sure to use Basmati rice - it tastes better and is healthier for you.
Rince your rice thoroughly under running water until the water is no longer cloudy.  Put the rice in a saucepan with a tight-fitting lid, and cover water so that the water is at least 2 inches of water ABOVE the rice.
Cook over low heat until the water begins to boil.  Add a squeeze of lemon juice (or 1 tsp from a bottle of juice) and keeping the heat low, simmer uncovered for about 7 minutes, until the rice is cooked on the outside, but still a bit hard right in the centre.
Turn the heat off, drain the excess water, and cover tightly, stretching a tea-towel between the lid and the pot.  This lets the rice finish cooking in its own steam, and prevents it from getting sticky or mushy.  Let the rice sit like this for 2 to 4 minutes.  Fluff with a fork and enjoy the compliments of your friends and family.
