Quick and Yummy Chickpea Curry

Serves 4

  • 1 Tbsp oil
  • 1 clove garlic
  • 1 green bell pepper, diced
  • 1 tsp cinnamon
  • 1 tsp corriander, ground
  • 1/2 tsp cumin, ground
  • 1/2 tsp turmeric
  • 1 tomato, chopped
  • 1/4 cup water (more or less)
  • 1 Tbsp tomato paste
  • 1 can chickpeas
  • 1/3 cup parsley, chopped
  • pinch sugar
  • 1/4 cup coconut flakes (unsweetened)
  • 1/4 cup sour cream

Fry the garlic and bell pepper in the oil until soft, then mix in the spices and sauté for 2 to 4 minutes, until it smells really good. Add the tomato, water, paste, chickpeas, parsley and sugar, and cook for 10 to 15 minutes over medium heat.  Just before serving, add the coconut and sour cream.  Serve over rice.
