Vegetarian Delights and Other Recipes

Refried Beans
Yummy and low-fat.  But mostly yummy.

Serves 3

  • 1 can black beans
  • 1/2 cup water or stock
  • 3 cloves garlic, minced or crushed
  • 1 tsp ground cumin
  • 1/2 cup chopped cilantro
  • 3 Tbsp tomato sauce
  • 1/4 tsp cayenne pepper, if desired

Place all the ingredients in a saucepan, cook over medium heat until boiling and then simmer 10 minutes.  Mash the beans with a potato masher or similar device, and enjoy in tortillas or taco shells with salsa, salad greens, grated cheese, if desired, avocado, and other Mexican fixings.
