Spinach Roll -Ups

Serves 4

  • 10 whole wheat lasagna noodles
  • 1 cup low_fat cottage cheese
  • 3 bunches spinach, stems removed, chopped (or 2 packs frozen, thawed)
  • tsp nutmeg
  • 3 Tbsps parmesan cheese, grated
  • 1 cup onions, sliced
  • 2 cups grated Muenster, Cheddar or Jack cheese
  • 1 can tomato sauce (680ml/24 oz)

Cook & drain noodles according to pkg directions. Thaw the spinach, or steam the spinach until it is limp, if fresh. Add the parmesan cheese, cottage cheese and nutmeg. Spread noodles with spinach filling, roll up and stand on end in oiled 9x9 baking pan, with some tomato sauce poured into the bottom. Sprinkle cheese and onions on top of noodles. Pour remaining sauce over noodles. Bake in 350F oven for 45 minutes or until tomato sauce is bubbling.
