Sweet Potato Pie

Serves 4 as a main dish or 6 as a side

1. Cheddar_Poppy Seed Crust

  • 1/3 cup cold butter
  • 1 cup flour (whole wheat is fine)
  • 1/2 cup grated cheddar cheese
  • 2-3 TBSP poppy seeds

Cut the flour and butter together with two knives or a pastry cutter, until the consistency is like cornmeal. Add cheese and poppy seeds. Add up to 3 TBSP very cold water to make the dough stick to itself when pressed. Press into a greased pie dish.

2. The Filling

  • 2 lb sweet potatoes
  • 1 TBSP butter
  • 3/4 tsp salt
  • 1 TBSP honey
  • 1/2 tsp cinnamon

Peel, chop and boil the sweet potatoes until soft. Mash with the remaining ingredients. Fill the pie crust and top with (in this order):

  • 1/2 cup grated cheddar cheese
  • 1/3 cup wheat germ
  • dots of butter

Bake at 375F for 40 to 50 minutes.
