Vegan Bread Pudding

Makes 1 lasagne-sized pan

  • 4-5 cups crumbled bread (a few days old is best)
  • 1 cup chocolate chips
  • 1 1/2 cups soy milk
  • 1 1/2 cups water
  • 1 banana, mashed
  • 3 egg replacers (or, in a pinch, 3 eggs)
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 2 Tbsp brown sugar
  • 3 Tbsp honey or rice syrup

Lightly grease a 9x13 baking pan.  Mix the dry bread crumbs and chocolate chips and spread evenly in the pan.

Combine the remaining ingredients, mixing well until smooth.  Pour over the bread.

Bake at 350F for 1 hour.
